Edible coating made of taro starch and red dragon fruit peel extract

چکیده

Edible coating is a technique for food preservation that improves product quality. This research was conducted to introduce innovative edible packaging environmentally friendly and safe in products with the aim extend shelf life ability prevent microbial growth. made from taro starch, CMC, glycerine, stearic acid, dragon fruit peel extract, then pH analysis antibacterial activity test against Staphylococcus aureus were carried out. It known characteristic of produce best value obtained 1.0 % concentration namely 5.197 1.685 mm, respectively. The average inhibition zone formed by extract has weak inhibitory power bacteria.
